Blue Skies, Smiling at Me

It is SO easy to get up when the days start getting longer and the air is warmer!  I beat my 6am alarm this morning by 45 minutes and was up and raring to go at 5:15.

With Jillian Micheals chatting in my ear, I went for slow and easy 8.19 miles in 1:06:45, making my pace about 8:09.  A fabulous run under this amazing blue ski this morning!

I have Ava to thank for this pic as I only happened to find it when downloading pictures, forgetting that she ran off with my camera for a bit this morning.

Yay to breakfast cookies and a cup of coffee after a nice long run!  My usual weekend long run got bumped up in the schedule due to the holiday weekend. 😉

Newman’s Own Organic Coffee with a splash of 2% organic milk (thank you Jillian for teaching me the importance of organic coffee and milk!) and a breakfast cookie made last night with 1/2 cup oats, 1 – 2 Tbsp ground flax, a scoop of crunchy almond butter, 1/2 mashed banana and a few glugs of vanilla hemp milk… topped this morning with banana slices from the left over half.

Ava went with Aunt Ellen to the zoo today while a cranky, Little Miss No Nap For The Past Two Days stayed home and went down for a very early, and very necessary, nap.

I just finished up lunch and have a new recipe to share.

Curried Chickpea Sandwich Spread

Serves about 3.

1 can chickpeas, rinsed and drained

1 medium carrot, peeled and grated

1 small onion, chopped

2 – 3 Tbsp mayo

A few shakes of curry powder, cumin, cilantro and S&P to taste.

Mash chick peas with a fork or potato masher, add grated carrots and chopped onion. curry_sandwich_1

Add mayo and spices and stir!

An amazing sandwich spread, or dip for cut up veggies or crackers.

I made a sandwich with a whole wheat Arnold’s Sandwich Flat, spinach and a pile of steamed broccoli, cauliflower and mushrooms topped with some parmesan cheese.

  1. haha…and I curse that 5 a.m. sun blasting in our room.

    That sandwich spread sounds really good and I’m definitely going to make that. I have all the ingredients. 🙂

    How often do you buy your fruits/veggies? More than once a week? If not, any tips on keeping them fresh?

  2. Yes, I definitely buy fruits and veggies more than once a week. I probably stop at the store for fresh produce 2 or sometimes even 3x a week.

    I also find that somethings keep longer than others, like broccoli and cauliflower, so I’m sure to eat the things that spoil quicker first, and save the cruciferous vegetables for last.

    When I buy bananas I will buy yellow ones and green ones too, so that they ripen at home and but I’ve still got yellow bananas to last me until then. I do the same thing with avocados.

    I think Glad or Ziplock sells something now too that helps keep veggies fresh longer, I know they talked about it on the Biggest Loser and Jillian has even said good things about it on her radio show too. Could be worth looking into.

    You probably know that the methane given off by the bananas (any fruit, actually) hastens their ripening time. If you separate them and keep them apart somewhat, you add a day or two to their ready-ness (? is that a word?)
