Yes, more pseudo swearing in the title.

Today we hit the beach.

We didn’t have plans for today until our friends called to ask if we wanted to join them on a little beach trip. We threw lunch in a bag and off we went.

Lunch? Leftovers.

While practically all the Newman’s Own Organics loot we were sent to try has been fabulous, I have to say these weren’t that great. Not BAD, but just – weird. Maxine spit hers out and a seagull ate it. I ate a few and the other kiddos ate them but these aren’t something I see myself buying out of my own free will.

A snacky apple for the ride home.

I found half a bag of brown lentils in the cupboard and decided to make lentil tacos for dinner tonight.

1+ Tbsp extra virgin olive oil
1 clove of garlic, minced
1 medium onion, diced
8 oz lentils (I used brown tonight but red are fine too) rinsed and drained
8 oz frozen corn
1 cup water/veggie broth
1 tbsp cumin
1 tsp chili powder
1 tsp paprika
salt

Saute garlic and onions until soft. Add lentils, corn, water/broth and spices. (Spices are approx, add more or less to taste.) Cover and simmer on medium-low for about a half hour, less for red lentils.Β  And more water and/or broth as needed, stir occasionally.

I decided to make a taco salad with my serving of lentil taco goodness – but of course this is a perfect filling for tortillas to make actual tacos with.

Served on a bed of green leaf lettuce, 1/4 diced avocado, 1/2 diced tomato and a glop of salsa too. I would have thrown a dallop of plain greek yogurt on here too but I was out. Boo!

  1. newman organics are sending me some stuff- hope they dont send me those pretzels! haha. how do you feel about the jocalat line? i find it just okay. i prefer regular larabars. and with the breakfast cookie- okay good im glad i shouldnt be able to hold it in my hand like a cookie- that means i made it correctly haha it was really good! and maybe you are right- maybe they will one day take the place of overnight oats in my heart haha. im excited to try different combos!

  15. OMG alison, i am so far behind. it wasn’t until i finally got back on that i realized how much i needed some alison in me life. love those lil’ punkins at the beach – too cute!

    all your eats are always amazing. seriously. and YES for a dehydrator! hopefully you can find some new ways to use it after the fruit thang (i think i prefer my fruit fresh as well) – if i think of anything, i will pass it on.
